Another Recipe

I was blog surfing last week and came across this guy's food blog, www.mattbites.com. I saw this recipe for Cilantro Chicken with avocado and pickled salsa. It looked so good, I had to try it. And it was amazing. I cut the cumin in half and used skinless chicken breasts, but left the rest the same. (I have issues with cumin. You know how Mexican food can smell like B.O. sometimes? Well, that is cumin.) Anyway, delicious recipe. Check out his blog and see the picture here. Here is another copy of the recipe.

Cilantro Chicken with California Avocado and Pickled Tomato Salsa recipe courtesy Mary Sue Milliken & Susan Feniger and the California Avocado Commission.

Ingredients
4 (6 oz.) boneless chicken thighs or breasts, with skin
Salt and freshly ground black pepper, to taste
¼ Cup extra virgin olive oil
¼ Cup freshly squeezed lime juice
1 bunch cilantro leaves, chopped
1 Tbsp ground cumin
4 scallions, trimmed
Pickled Tomato Salsa (recipe below)
2 ripe Fresh California Avocados, peeled, seeded and cut in 1/2-inch dice
2 Cups cooked brown basmati rice

Instructions
1. In a shallow, non-reactive dish, season chicken on all sides with salt and pepper. Combine olive oil, lime juice, cilantro and cumin in a small bowl. Brush mixture on scallions and pour remainder over chicken, tossing to evenly coat. Allow to marinate at room temperature for 30 to 45 minutes.
2. Preheat broiler or grill. Beginning with skin side toward the heat source, broil or grill chicken until just cooked through, about 12 minutes per side for thighs and about 9 minutes per side for breasts. Grill or broil scallions about 2 minutes per side.
3. Toss Pickled Tomato Salsa with diced avocados and reserve until chicken is cooked.
4. To serve, arrange grilled chicken over a bed of basmati rice. Mound avocado salsa mixture on top of chicken. Garnish with grilled scallions. Serve immediately.

Pickled Tomato Salsa

Ingredients
1 Pound tomatoes, peeled, seeded and cut in quarters
½ bunch scallions, white and green parts, thinly sliced
2 Serrano chiles, with seeds, thinly sliced in rounds
½ Cup white vinegar
2 ½ Tbsp brown sugar
2 tsp salt
4 tsp freshly grated ginger
1 Tbsp minced garlic
2 tsp yellow mustard seeds
2 tsp cracked black peppercorns
2 tsp ground cumin
1 tsp cayenne
½ tsp turmeric
½ Cup extra virgin olive oil

Instructions
1. In a large bowl, toss tomatoes with scallions and chiles.
2. In a medium saucepan, bring vinegar to a boil. Add brown sugar and salt, and cook until dissolved, about 1 minute. Remove from heat and reserve.
3. Measure ginger, garlic, mustard seeds, cracked peppercorns, cumin, cayenne and turmeric onto a plate and place near stove. In another medium saucepan, heat oil over moderate heat until just smoking. Add spices and cook, stirring constantly with a wooden spoon, until aromas are released, about 2 minutes. Remove from heat and stir in vinegar mixture. Immediately pour over reserved tomato mixture. Stir to combine, cover with plastic wrap, and refrigerate 3 to 4 hours or several days.
4. Before serving, remove tomatoes from juices, roughly chop, and return to pickling liquid.

Note: To peel tomatoes, remove the cores and score an X on the underside. Blanch for 15 seconds in boiling water and immediately plunge into iced water to prevent continued cooking. Peel with a paring knife.

Nature

Charlie wasn't home for dinner tonight so after running errands in the late afternoon I took the kids to McD's. I fed them and let them play. Finally, it was time to go home. We all walked out to the car together and climbed in. The windows were rolled up as we pulled away. Suddenly, I felt a needle prick my...um...lower, lower back. "Ouch, something bit me." I say to the kids. "Oh, it really hurts." I feel and there is a little bump. Then about 30 seconds later a bee flies in front of my face. I roll down and window and he flies out. When I got home I checked and saw a little welt.

I have to say that I feel cheated. I thought that bees die after they lose their stingers. This little guy stung me in a sensitive area then flaunted his victory by flying in front of my face. I didn't try to smush him or take revenge. I just set him free. My only hope is that death is not immediate and that he will die a slow agonizing death just after he has told his little bee friends of my kindness.

Thems the Brakes, Kid

Emma and Mia were getting along really well... until they weren't. Mia scratched Emma and Emma bit Mia. I'm not sure in what order. They both cried to me. Then Emma asked me to check her teeth (or lack thereof) because when she bit Mia really hard it hurt her mouth. She cried and looked up at me for sympathy. Uh, sorry kid. You did this to yourself. You actually want me to feel sorry for you for biting your sister too hard?!

A Day In the Life of Miss Mia

Last week I took Mia to her kindergarten check-up. I went to basketball first and left just in time to go straight to her appointment. I was a bit sweaty and still wearing my workout outfit. I held Mia on my lap as we waited for the doctor. Mia looked up at me and said "Mom, I love you...even if you do smell bad." So sweet, I know.

Mia had to get five shots and a TB test. Then she had to give a urine sample. She screamed a lot. I had hoped that since she is so tough that she would surprise everyone and take it like a champ, but it was not to be. Her consolation prize was lunch or ice cream where ever she wanted. She chose Reds BBQ, a sit down restaurant. She told me she wanted the onion strings for an appetizer, strawberry lemonade and macaroni and cheese. Then she told me to have the waitress put extra chocolate syrup on her ice cream and to tell her why. She loved all the attention.

Then that night the doctor called me and said Mia has a bladder infection and some glucose in her urine. That explains all the "accidents" several times a day! But the glucose in the urine meant that she had to go back the next day so they could do a blood test for diabetes. She was really upset. I told her we would go together and help each other be brave. (I had asked the doctor to do a panel on me just to make sure everything was good since I am getting so old now.) Then she got to pick lunch again. BTW no diabetes. :)

Do As I Say, Not As I Do

Emma noticed a problem when we got to church on Sunday. Someone had scribbled on the wall.

Her solution? To write"do not color on the wall" in dark purple crayon.
Justin noticed what she was doing and tried to tell on her. She picked up her coloring book and held it open against the wall to cover it up. I ignored Justin and repeatedly told him to be quiet. Then as the sacrament was being passed I looked over at Emma as she tried to hold the coloring book against the wall with one hand and take the sacrament with the other. I realized something was amiss.

After Charlie took a picture with his phone Emma spent the next 30 minutes scrubbing it with a wipe. I spent the following 30 minutes scrubbing it until there was just a purple blur on the wall. Charlie went home, got some cleaning supplies and it is all gone now. Her punishment was to go up to the Bishop and tell him what she had done. You should have seen her little face!

Can I See Your References?

Nana, Charlie's mom, watched the kids Saturday night for us. When we got home we were told this story.
Justin said he wasn't feeling well. He brought Nana the thermometer. I think it was around 97.6. He said his throat and head hurt. He really wanted me to come home. Nana told him that she could take care of him and he would be fine. He looked at her and asked how many kids she had raised... just two?

The next morning he asked me if having a temperature that was too low was very dangerous. I said anything in the 97 range is pretty normal and safe. He said he was pretty sure that it wasn't.

To Justin, Emma, and Mia

This post is a little personal, but I want to have it written down where my kids will know where to find it.

Sometimes I wonder about how my children will turn out. I worry about what trials they will have. Am I teaching them the all the right things? Is it sinking in? Do I set the best example I can? I recently had a dream that I died and my kids were too young to understand all that I had tried to teach them. It was the most terrifying dream I have ever had.

Last week I put the kids to bed and checked on them a little while later. Justin's light was on. I peeked in and there he was kneeling next to his bed with his scriptures in front of him trying to read the Old Testament. I went in his room and sat with him. I asked if he understood what he was reading. He said not really. I told him that was pretty normal because the Old Testament was particularly hard to understand. I read with him for awhile and we talked about what we read and what it meant. It was such a great experience for me. We try to have nightly scripture study with the family, but it is different to do it one on one with my oldest.

If there were only a few things I could have my kids remember about what I have tried to teach them it would be:
  1. God loves you. He wants you to learn and grow. He will give you challenges, but never anything you can't handle if you rely on him for help. He answers prays.
  2. The scriptures are true. I have read them and asked God if they are true. I felt the Holy Ghost overwhelmingly witness to me that they are true. Turn to them for guidance and answers to your questions. When there is something you really need an answer to study it out, read, try to make a decision and pray to God to know if you made the right one. He rarely hands you anything without you working for it.
  3. Learn to recognize what the Holy Ghost feels like. He will warn you and guide you to keep you safe and give you answers. Always follow those feelings.
  4. I love you. I love you. I love you. You are wonderful and amazing.
